| Eric began his career in hotel operations management with experience ranging from luxury hotels to brewpubs, both in the United States and Europe. As a consultant, Eric has worked with over 400 hotel properties representing the world’s finest groups including: Four Seasons Hotels & Resorts, Hilton Hotels, Marriott, Inter-Continental Hotels and Resorts, Mandarin Hotels, Preferred Hotels & Resorts, Swiss Leading Hotels, Disney Hotels & Resorts and the Peninsula Group. A Swiss and American citizen, Eric has also designed and delivered professional development seminars for Ecôle hôtelière de Lausanne (EHL) in Switzerland and taught under their flag in Asia, Europe and the USA.

| Kathi is a graduate of the Business
School of McGill University (Montreal, Canada) and has Bachelor’s
Degrees from the Philosophy School and the Political and Economic
Sciences Dept. of the Law School of the University of Athens. She is
fluent in Greek, English, French, German and has good knowledge of
Dutch. Kathi Apostolidis is a partner in Tourism Taskforce, a tourism
marketing consultancy offering services to both the public and private
sectors. She deals with Management Consulting, specialising in Public
Affairs, Strategic Management, and International Marketing.

 | Ashley Bartner lives in Le Marche
Italy and operates La Tavola Marche Agritourismo (farmhouse inn) &
Cooking School. She has worked with the private clubs & resort
company ClubCorp for 10 years at two different private, member-only
clubs. Ashley is a proud member of
Slow Food both in The United States & Italy, and only cooks/serves what is in season and locally
grown, supporting the local economy. Ashley is a featured publisher
for Wandering Educators & writes a monthly column for Italia!
Magazine.

Earnhart was educated at Cornell, Ecôle hôtelière de
Lausanne in Switzerland and holds a Bachelors Degree from Portland (Oregon) State University
and a MBA in Hospitality Management. He has worked as a hospitality
leader and consultant with such clients as Swiss Deluxe
Hotels, Walt Disney World, Four Seasons Hotels and Preferred Hotels
& Resorts, and as Director of Operations for the Ritz-Carlton in
Sarasota, Florida, USA. As Academic Director at the Swiss Hotel Management School in Leysin, Switzerland, Stephan is developing the next generations of hospitality leaders. |

 | Jeremy is a specialist in corporate governance pertaining to
investor communication programs and has also advised some of South
Africa’s blue chip public companies on their brand management and
corporate image. He recently started African
Relish, a destination based recreational cooking school. He serves on the Board of Trustees for
the WWF (Worldwide Fund for Nature) formerly known as the World
Wildlife Fund. He also serves as a non-executive director of
Greymatter & Finch, a leading corporate and investor communications

 | Rebecca has been
involved with the Ontario Culinary Tourism Alliance (OCTA) since 2005
as the volunteer lead for Prince Edward County. Rebecca is the
Executive Director with the OCTA and is working with regions across the
Province to advance culinary tourism. Rebecca designed and
developed courses for George Brown College's cutting edge Culinary
Tourism Management program which launched online in January 2009.
Rebecca is a member of the OTMPC Town & Country Committee and chair
of the Prince Edward County Slow Food Convivium. |

 | Kathryn McAree created Vancouver Island’s only culinary tour company, Travel With Taste. She realized that the bounty
of organic farms, vineyards, cheese makers, wild seafood, et al that
make Vancouver Island unique, would appeal to a kind of globe trotting,
palate pleased traveler. Kathy is a board member of the British Columbia
Culinary Tourism Society and a leading force in the Wine Islands
Project working to promote BC and the island as a culinary tourism
destination. |

 | Don is a founding member of the Council of Tourism Associations of British Columbia,
and was appointed its President in 2001. He is the current Chair of the
Victoria Restaurant Association. He has been a member and director of
many organizations including the Canadian Food Services Executives Association and Tourism British Columbia.
In addition to serving as Chair of the International Culinary Tourism
Association, Don currently holds the positions of Chair of Culinary Tourism Society of British Columbia, Director on the BC Culinary Arts Foundation, and board member of the Victoria Chefs Association. |

 | Harold
has served on the Board of Directors of the International Culinary
Tourism Association (ICTA) since 2004 and as Vice Chairman since 2006.
He also chairs the Education & Certification Committee and is on
the Association’s Membership Committee. Harold has dedicated over 35
years to the travel industry. His management and training skills have
lead several companies to success and recognition. Harold is a senior
partner with McCabe Travel Group and lectures on travel styles and
trends, destinations, and the history of food for various travel
organizations such as ASTA and industry conferences. |
