OVERVIEW
There are many kinds of certifications in the tourism industry. While some professionals may be content to answer 10 easy multiple choice questions to become a "destination specialist", we know that consumers - your customers (or visitors) - need to feel comfortable about spending money with your business (or destination). Our Certified Culinary Tourism Professional (CCTP) program is comprehensive and gives a high level of credibility to your sales and marketing efforts. In times like today when you have to fight hard for every customer, an extra edge like CCTP designation can help to boost your business.
The certification process is straight-forward and consists of reading the book, working through 4 training modules online, and writing a research paper. After you enroll, you will receive access to our online e-learning system. You will also receive by postal mail the Association's book, Culinary Tourism: The Hidden Harvest, which you should read before starting your online modules. The training modules use examples from around the world and are not U.S.-centric.
Note: You will be able to complete the modules at your leisure, but must complete all of them within 6 months from the date you sign up.

MODULE 1: DISCOVER [2 online segments, 30 minutes each]
Introduction to Culinary Tourism
Teaches the essentials of the culinary tourism industry: its history, definitions, examples, demographics and psychographics of culinary travelers, economic impact assessments, etc. By the end of this module, you will understand the difference between culinary tourism and agritourism, how gourmet tourism is different from culinary tourism, who culinary travelers are, and the benefits of culinary tourism to your business model.

MODULE 2: LEARN [1 online segment, 45 minutes]
Brief History of Food and Tourism
The globalization of food and tourism has given us an interesting new dimension for both industries. Have you ever wondered how we got to this stage? This module teaches how we came to place high value on cuisine and how cuisine evolved from our less glamorous history ages ago as hunters and gatherers. For example, did you know that French cuisine actually evolved from Italian chefs who were brought to cook for French royalty beginning in the 15th century? You will learn the difference between food and cuisine, and how to identify what is important to culinary travelers. The knowledge you learn here will help you to include the components necessary for a complete culinary tourism package.

MODULE 3: CONNECT [1 online segment, 60 minutes]
Identifying & Working with Your Culinary Tourism Network
There is a lot more to starting a cafe or winery than you might expect. The entire world is now your competition. Like it or not, you are instantly part of the tourism industry, regardless of where you are located. What does that mean for you and your business? Similarly, for tourism businesses like inns and tour operators, what does it mean to now focus on "cuisine" in your product offerings? This module teaches how to be more competitive in culinary tourism sales and marketing and how you can grow your business by collaborating rather than competing. |

MODULE 4: DEVELOP [1 online segment, 20 minutes; 1 segment by telephone, 30 minutes] Creating Your Culinary Tourism Specialization
You will work closely with your faculty advisor for modules 4 and 5. In module 4, you will learn about the 13 segments of the culinary tourism industry and identify which one interests you most. You will also need to choose a geographic specialization. Your advisor can help you focus your interests so you are able to concentrate on the segment and region that will be most rewarding for you.

MODULE 5: PROMOTE [you decide how much time to devote] Your Specialized Culinary Tourism Study Program
In this segment, you will work with your faculty advisor and write your reseach paper, focusing on the segment and geography you chose in Module 4. Your paper must be 30-50 pages in length. After your paper is written and accepted by your advisor, you have the option to make it available in our online BrainFood library, where other professionals will be able to find your work and connect with you to ask you questions (or even hire you). |
